Healthy Lunch/Breakfast… Vibrant Springtime Asparagus and Eggs

Today for lunch, I wanted something light. I had a big breakfast and was not super hungry. So I made Garlic Lemon and Cayenne Blanched Asparagus, with two fried eggs. Spring cannot come soon enough. Asparagus is going to start popping up in the stores. So try this light, vibrant dish out.

This was so satisfying and delicious. It was light, but had enough fat and protein to be fulfilling. If you like the idea of Hollandaise sauce this will be right up your alley. This is a less caloric, and has less fat than Hollandaise sauce. The main reason is that lack of butter. This is so very satisfying in the same way. Taking out the Hollandaise sauce you remove for about 4 ounces or 1/2 cup you take out 140 calories, and 14 grams of fat. The sauce is made by adding pats of butter to wisking/cooking egg yolk and lemon juice. Those majority of those calories and fat come from the butter and the extra yolks for the sauce.

I also added finishing salt to the meal with Maldon salt.

Maldon salt is a flaky sea salt that is used for finishing your food. When I feel like being super special I will pull out the Maldon. Let me put this into perspective. For the boiling water to blanch the asparagus, I just used regular granulated salt. It will be dissolving in water and does not need to be super special. This salt you put on your food cause you want to taste it. You want to taste the different minerals in it. The minerals in the “fancy” salts are what gives it different flavors.

Make your food interesting and fun, and delicious and it will be such a satisfying part of your life. I digress though back to the recipe.

Recipe: Garlic Lemon and Cayenne Blanched Asparagus (yields 2 servings)

Ingredients:

  1. 2 bunches of asparagus
  2. 1 lemon zested
  3. 1/2 lemon juiced
  4. 2 cloves of garlic sliced
  5. 1 tsp of olive oil
  6. 1/4 tsp of cayenne pepper plus a little more for sprinkling on top of eggs
  7. Maldon salt for finishing
  8. Pepper to taste
  9. Granulated salt for blanching water

Directions:

  1. Take a spear of asparagus and holding both ends bend till it breaks. Where it breaks cut the rest around that area. Because that is where the woody part of it basically ends. Blanch the asparagus in salinated/salted boiling water, for about 2 minutes or till just tender but still has a crunch. Remove from water and dunk in ice bath or bowl with cold water to stop the cooking.
  2. In a pan add oil, cayenne, and garlic, heat till garlic starts to brown around edge. Drain and add asparagus to the pan, toss the asparagus in the oil in pan just to coat. Portion out Asparagus onto two plates. Squeeze a little bit of lemon on them. Add lemon zest to asaparagus.
  3. Fry 4 eggs, in the same pan. Take plats and add egg to the asparagus. Garnish with pepper, Maldon salt, lemon zest, and sprinkle of cayenne.
  4. Serve and enjoy immediately

Saturday Striking class… tiny tweaks, clench work, lots of kicks, and cake

Drenched in Sweat

2 hours of Muay Thai practice, and I am pooped. We ended with clench work, and we were all working so hard we were all drenched in sweat. But lets start at the beginning first.

Today we made it to striking class. We focused on Muay Thai today, and had a great teacher named Dom. Both Kru Kristen, and Kru Krysta are still out at the instructor camp for Inosanto.

Kicks

We started out with stations, jump rope, heavy bag teep and kick, and then shadow boxing to warm up. We then went right into Thai 4 counts. We practiced leg kicks. It has been a long time since we have worked on leg kicks and I can say I am not as good at them as I am at round house kicks. I need to work more on them. You are supposed to turn your kick so much that your knee is almost pointing at the floor, and you are supposed to sink your weight into the kick.

We then worked on sparing where we tried to get any variation of left to right kicks in. My favorite things to do is to feint a left kick then teep the person, and follow with hook and cross. Or I like to throw a cross, and leave my hand there in their face, while I get a right round house kick in. It often tricks people and they don’t see it coming, so I get a hit in. =)

Tiny Tweaks

I had the pleasure of working with Dom personally, he helped me make tiny tweaks to my cross. I need to remember to fully extend my arm, and rotate my pointer finger and middle finger knuckles down when I punch to get the full extension and straight line. I have had Kru tell me the same thing but having a person take off my glove and actually have me punch while they turn my hand was so super helpful. I am so excited to keep practicing this and hopefully make my punch much better.

Clench Work

After all this we ended with clench work, and we were all working so hard we were all drenched in sweat. We got to play around. Trying our different things with our partners, to see if we could get in, make a frame and get the upper hand. Hah! It was so much fun. One girl and I were just giggling as we grunted and tried to get into full plumb

I had a blast today at class. I finally got a tripod to put my phone in to video some of my kicks. Here is a video of me doing right round house kicks to, right hop kicks. We were working on the right hop kicks last Thursday and I still need to work on them. I need to get my knee up higher to create more momentum.

After our class I had a date with a friend that I was so looking forward to. We went to a bougie coffee shop where I got a chance to have a coffee, a piece of cake and great conversation. The cake won! I was not able to eat even half of that cake it was so big. But it was nice to have a treat after a great workout.

Thursday Muay Thai and Kali…Hop Kicks, Puta Kapala from Jab Cross entry

I just got done with 2 hours of Muay Thai and Kali, and boy was it nice to get to do my training. Doing something that is normal in my life. Because this morning did not start off normal. I had one of those cringe moments that every parent has, when the dreaded pink eye mentioned.

Waking up to find that your son has pink eye, will throw off your day. So today my son woke up and told us that his eye was crusty. I had been keeping an eye on him… haha, no pun intended. I had been keeping an eye on him, because he was around another kid who’s eye was red and crusty on Monday of this week. I got him into the pediatrician at 8 am, and we promptly found out that he has pink eye. He has medicine, and as of tomorrow will not be contagious any more.

On top of doc appointment, getting the medicine from the pharmacist, and dealing with every day family stuff. I also bleach bombed my house. I bleached and disinfected every surface of my house that I could think of that would have been touched. Everyone’s sheets and blankets, and his winter coat as well. So I am and was tired getting to the gym, but ready and raring to go. I needed this.

Muay Thai : Hop Kicks

Let me just hop… (hahah that was an accidental pun as well)… into the Muay Thai. Today both Kru were away at an Inosanto instructor camp. So we had a guest Thai teacher. He had us warming up with stations, jump rope, teep to kick on bags, shadowboxing, and then mirror movement to teep.

We worked on partial Thai 4 counts, where we teep with lead leg, right kick, then cross. The reason this was emphasized is that it is a different rhythm to what we normally do. You see in Thai a lot of the time if you do a right kick you return with a hook or cross, because you will have set up your body to do the opposite hand hit. So when you kick with the right leg then hit with the cross as an orthodox fighter, your opponent will not expect it.

The other partial Thai 4 count we did, is the front teep, left kick, to cross. What was emphasized on this one was the teep to cut step quick left kick. Because the habit or what your body wants to do is to teep and then put your foot down right in front of you. However, doing this drill we try to work on our balance bringing the foot back to do a quick cut step and left kick. It changes the rhythm again and my take your opponent of guard.

After all that we worked on Hop Kicks. Man trying to make the lead leg do a hop kick my brain is telling my body to do this thing, but either my leg is stupid or there is a miss fire/miss communication between my brain and my leg. That is what it feels like. We have to bring our knee forward and up, with momentum going forward place the foot down then do the kick. Yeah… I am going to have to work on those on my own, in front of the mirror. I have to get my brain and my body to synchronize.

Kali: Puta Kapala from the Jab Cross Entry

In Kali we had another guest teacher, because again both our Kru are at an Inosanto Instructor camp. He had us doing Silat again. We worked on the Puta Kapala again, but this time from the Jab Cross entry.

There were 4 entries we got to 3 of them that we were able to rep out.

  1. Outside Deflect from the Jab Cross to Puta Kapala
  2. Slip the Jab Cross to Puta Kapala
  3. Inside Deflect from the Jab Cross to Puta Kapala
  4. Reverse slip/Scissor/Gunting from the Jab Cross to Puta Kapala

We did 1 through 3. It was all clicking and I was not have a brain melty moment.

What you are seeing here is the instructor showing the first two, number 1 and number 2. I thought you might like to see some one who knows what they are doing instead of me. =)

I did not get video of the 3 rd one. This one we deflect the cross with the right hand and mouse the bicep, followed with control of the other arm, eye sweep, throat punch, elbow, knee, to the Puta Kapala.

This was a fun class, and things were clicking. The Puta Kapala we were doing Tuesday and last week we were doing from the shield of kick. So this is the Puta Kapala with different entry. Either way you get your opponent on the floor, and then you can deal with them as you need to. Goose necking the wrist or submitting them, or hitting them and running away.

I got home was a little hungry so I made a snack of yogurt, fresh fruit, and a small bit of granola. It is important to refuel your body. Especially when it is telling you that it is hungry. Just make it something that your body can put to good use.

Tuesday Muay Thai and Kali… Thai Test Leveling UP!, Silat Puta Kapala, and another take down.

Just a little sore from yesterday… Yay! My hamstrings are not happy with me, but that is ok. That means I targeted them and got a good workout in yesterday. 2 hours of Muay Thai and Kali training.

Testing for Green Band

Today was a great day again in Muay Thai. We had a Thai Test. What that means is we all line up and demonstrate our knowledge of the the Thai, Kicks, Elbows, Knees, Teeps, and Punches. Kru will say lead leg round house kick through, and shield, go. Then we have to demonstrate that we understand what she is saying.

We then worked on (Cross, Jab, Lead Kick), (Cross, Jab, Rear Kick), (Cross, Jab, Rear Knee), (Cross, Jab, Lead Knee), (Cross, Jab, Short Teep/Rear Teep), (Cross, Jab, Long Teep/Front Teep). This was a lot of fun. The Kru goes around viewing us and seeing what level we are at. What our moves look like.

After that we worked on the Thai 4 count. (Left/lead kick, cross, hook, right/rear kick), ( Right/rear kick, hook, cross, Left/lead kick), (Left/lead kick, cross, hook, left/lead kick), (Right/rear kick, hook, cross, right/rear kick). I am making it a point to say front or rear, because I was working with a south paw all night and his jabs come from the opposite side of mine, his hooks, everything is is different, and he has to think of it as rear kick, verses right or left. For him the rear kick is his left kick. =) So its a different way of thinking and it makes it hard to hold pads for someone that is opposite your stance. But you know what we both will be super proficient on both stances if we work together more.

Anyway… lets get to the point. I tested today. I was an orange band and was testing for green band. I got it! I passed and now have a green band. I leveled up! I am so happy. I was beaming, and Kru Kristen gave me a huge compliment, on how I bring everyone together as a family. Before I started she said “everyone did not feel like family, and now that I am and have been here. I draw them together.” I almost shed a tear, because that was so sweet of her to say. I was tough and did not get emotional and embarrass myself in front of the whole class. =)

This is the armband progression we are following.

Kali- Silat Puta Kapala and two more take downs I can’t remember the name of.

Kali was fun today, we worked more on Silat forms. We added throat gouging in, pulling the opponent off balance toward us, hooking our foot behind their foot and then simultaneously pushing them and sweeping their foot. Your opponent then falls backward and is in a prone position.

We worked on a move where we parry the jab, slip the cross, upper cut them, hit them in the genitals, then controlling the arm they used to throw a cross at us, we step forward off balancing them. Putting our leg behind theirs and lowering our center of gravity, elbow them in the stomach and then push them over our leg, right on their behind. I believe this is a version of the Puta Kapala that you use if they step with the inner foot.

It may say something about me, but I like moving a few limbs, countering an opponents move, and using their energy to dump them on the ground. One of these days I will get better and be more smooth about it. When it works it goes so fast and is amazingly easy. When I am not doing everything right it is more difficult, I have to muscle it. Then I know I am not off balancing my opponent correctly.

That is all. That was my night and as I sit here typing, I am eating a snack of Hot N’ Spicy pickle bites. I really was craving the salt.

Weight Lifting Workout for the week of 3/4/2019… Squeeze a workout in

Mondays are the worst for me. I have to wake up at 5 am, and from there it is feed the family, work at my first job with little kids, come home and feed kids, and deal with my kids, then feed family dinner, then go to work. In there some where I have to squeeze a workout in. I do it. I may not like it. It may not be ideal but I do it. =) That is a small victory for me and for my health.

This is the weight lifting/cardio workout that I will be doing for, Monday, Wednesday, and Friday. I have Muay Thai and Kali, Tuesday, Thursday, and Saturday.

Workout: 40 minute

  1. 16 minute HIIT run
  2. Bulgarian Split squats reps 15, 12, 10
  3. Weighted Hip Thrusters 30 lb, reps 15, 12, 10
  4. Reverse lunges, with a bicep curl, 10 lbs each hand, reps 12, 10, 8
  5. Dead Lifts with two 30 lb dumbbells for 60 lbs, reps 12, 10, 8
  6. Double Leg Pike crunch, reps 15, 12, 8

Healthy Lunch… Veggie Noodles with Portabella “meat” Balls

I tend to eat more on the vegetarian side of things then the omnivore side. So my go to food will be a plate full of veggies. This could easily be vegan if you take the mozzarella out. This is gluten free if that is something you are trying to keep an eye on.

Today I wanted zucchini and yellow squash noodles, with portabella veggie “meat” balls, some basil and mozzarella balls. So that is what I made. This was so delicious and satisfying. NOM NOM NOM

I do not try to eat gluten free, but I notice my body tends to react better when I don’t eat to much gluten.

Recipe: Veggie Noodles with Portabella Meat Balls

Ingredients:

  1. 3 portabella veggie balls
  2. 250 g or 1 zucchini, and 1 yellow squash spiral cut
  3. 4 oz or 1/2 cup tomato sauce
  4. 5 mozzarella balls
  5. 1/2 cup or 8 sliced tomatoes
  6. 1/4 cup Sliced onions
  7. 2 tsp garlic olive oil

Directions:

Spiral cut the zucchini, and yellow squash. Cut the onions and saute them in the pan with 2 tsp of garlic olive oil. Add spiral squash noodles. Cook them just till they start to wilt. Remove the veggie noodles to plate. Add veggie balls to the pan and add sauce. Cook till cooked through. Add tomatoes to the sauce and balls. Place them on the noodles. Add the mozzarella balls, and fresh basil.

I did not add any extra salt cause there is plenty in the sauce and in the mozzarella balls.

I ordered some clothing from Gymshark, cause I wanted to know what all the hub bub was about. So many of the “influencers” are talking about it, reviewing it and giving them great reviews for the most part. I am always on the look out for good gym equipment and clothing.

Let me say first and foremost, I am very happy with the quality of the items. They are made well, and perform perfectly fine. I paired the pants and the shrug with a UnderArmour blue tank top.

I bought two items one a shrug, and a black pair of leggings.

Gymshark Geo Mesh leggings in black. Retail for $55.00. This is the Geo Mesh Leggings. I paid full price. I bought a Medium.

Gymshark Pro Perform Shrug in black. Retail for $25.00. This is the Pro Perform Shrug. I paid full price. I bought a Large.

Ok now that is out of the way, lets start with how it performed. I used both of these for Muay Thai, and Kali classes. This was two hours long. I then used another day for my HIIT run and weight lifting workout.

Pros for Geo Mesh Leggings:

  1. Very well made. No defects in the items I bought.
  2. The fabric is very nice.
  3. It feels like you are wearing nothing. The pants are so comfortable.
  4. Pretty Design
  5. Wicks away sweat
  6. Has a small pocket
  7. Great length for a short girl

Cons for Geo Mesh Leggings:

  1. Does not pass the squat test, will show underwear, slightly
  2. Not a lot of compression, I would say the compression was very light. I don’t know if that means I need to get a smaller size or its just these leggings.
  3. Fabric feels very thin. Compared to other brands, and that may lead to less compression.

Would I buy them again? No, I prefer more compression, I have HIIT workouts I do, and Muay Thai is a lot of burst activity and I like having more support.

Will I have them rotate in my gym wardrobe? Yes, they are comfortable and still function just not my favorite. I like them, but not the best in my opinion.

Pros for Pro Performance Shrug:

  1. Fit me and my larger shoulders
  2. Wicks sweat
  3. Very cute design. (Which is why I bought it)
  4. Great cover up but not to much to over heat you.

Cons for Pro Performance Shrug:

  1. Fabric was not what I was expecting. It was coarser than expected. It felt more like a wind breaker material.
  2. The arms were weirdly long.

Would I buy it again? Yes, I like the piece enough that if they had another color I would buy it again.

Will I have it rotate in my gym wardrobe? Yes, I think it is cute and it allows me to cover up, while working out.

So I wanted to see what the hype was about. I like the company, I like the clothes, are they my favorite. No but they are cute and will serve me well.

The shipping took about a week to get to me. They have to ship from over seas. It was shipped with UPS. Each item came in its own bag, and had a very nice high quality tag attached.

I may be ordering a different pair of leggings, from them. However, not this particular type.

Saturday Striking…Pak Sao Da, Violent Rainbows, and a kick for good measure

I missed Krav today because I got home from work at 1130 pm. I was exhausted and really did not want to wake up. I decided sleep was more important. I only did 1.5 hour Striking workout today. We focused on JKD, or Jeet Kune Do.

Today we worked on dealing with a jab, and returning a strike. For instance we worked on what to do when some one was throwing out noise, or just crappy jabs that were not committed. We need to watch the body movement for when they commit to a jab and put their body into it. One way is the Violent Rainbow. Where when they jab you perry, grab the glove pull them in, and elbow them. I then like to grab a hold of the person and then knee them or kick them for good measure.

We worked on slipping the jab, and then hitting them with a gut shot. Coming up with a uppercut, hook, cross, and then a nao tek. Or what is referred to as a nut shot.

The hardest part is watching the other persons body, and realizing when they are actually going to commit to a shot. You have to do this analysis all while you are parrying incoming hits, and trying to avoid getting hit in the face, or kicked for that matter.

It seems to me that a lot of people do not realize how much brain power goes into these arts/sports. When you see a person get into the ring to fight it just looks like two people going at it. You don’t see what they are actually doing internally. You have to:

  1. protect yourself,
  2. you have to block hits
  3. you have to return hits
  4. you have to look for openings
  5. you have to also look for committed shots so you can use their momentum against them
  6. you have to learn to read people
  7. you have to look for minute shifts in their stance

These are are hours taken to learn, and so many more hours spent training your body to have a reflexive response. This allows for lightening fast reactions.

I am not at that level yet. I have to actively remember to protect myself/block, I have to consciously look for openings, and I am still studying people. I have however, seen times where I block as a reflex before I knew what I was doing. I have also returned shots/kicks, that surprised my training partner, that I did, because I have been training to get those in, when I get the opportunity to. I assume its my training starting to seep through.

One of these days I hope to have some skill. Alas for now I will just keep training. I had a great day, and it was a fun class.

Thursday Muay Thai and Kali…Conditioning Kicks, 7 Weapon Rotations

I had one of those bad days… you know the ones that are epic in their badness? I am not going to go into great detail here, but suffice to say that Company A that I purchased a good/service from, made 3 accounting errors in two days. We caught one yesterday and thought we dealt with it. We were understanding and were fine with their reversal and their apology. We wake up the next morning
to them having pushed through another duplicate payment. They tripled charged us for the same good/service. We don’t know why they did. Our credit union has a fax from Company A saying sorry we made a mistake, from yesterday. So we had to deal with that, and in the mean time even though they made a mistake we have to wait till those charges are reversed. It was not an insubstantial sum of money either. If it was I would have taken it in stride.

I digress though. It was hard to get into the head space to workout. It would not have been as much of a problem, but I had other things go wrong today. I came, I have shown up and I worked through the problems during the day and I have worked through my workout. 2 hours of Muay Thai and Kali.

Muay Thai – Conditioning Kicks

We worked on more Thai 4 counts. I worked a fantastic sweat and it was well needed. I did not realize I needed to just kick the crap out of pads today, and it was very cathartic. We then did conditioning kicks. We were supposed to do testing today, but due to the fact that one Kru was out of town, and the other got a horrible cold they postponed the testing till Tuesday. Hopefully we will do it then. I got to work with a friend that I had not seen for a while. She was impressed with the quality of my kicks. She was around when I had my horrible back injury. So she is finally getting to feel my true power in my kicks.

I need to remember to breath. I am getting gassed cause I am not breathing. That is why we make sounds, or make a chhhh sound. Where you put your teeth together and pressing your tongue to your teeth exhale.

I got to use my new gloves, and I will do a full review of them in a later post after I have had about two weeks to break them in and get a feel for them. But here is what they look like. Are they not pretty? But after my first use of them for this class. I love them.

Kali – 7 Weapon Rotation

Kali was interesting today. We had a guest instructor today, cause our Kru was out of town. He had us doing a number of things one of them is in the video below. Where we start with a cob cob, and pie pie, then high low high, and low high low.

The most interesting and hard part was when we did the full box drill but had to switch between 7 combinations of weapons and open hand. For instance we had to do the full box drill up to 20 moves:

  1. Open hand one stick
  2. 2 sticks
  3. 1 stick and one knife
  4. 2 knife
  5. Staff
  6. Double handed sword
  7. Stick/sword and shield

This was interesting, hard, and wonderful at the same time. I realize what he was going for. He wanted to get comfortable with using all of it and transitioning between the different weapons. We have done the full box drill 100 times before but we would focus on say double stick then double knife. This gave us perspective about distance management and also forced us to think through our moves, when you had a completely different weapon then the last time we drilled this.

It is 11:38 pm here, and I have to be up in the morning at 5 so I am going to stop here. I am tired, and had a rough day. But I am glad I got into the gym. I am glad I pushed through even though I just wanted to hide my head under a pillow and ignore the world.

Tuesday Muay Thai and Kali…Kick High, Guillotine Choke Hold

My good friend DOMS (Delayed Onset Muscle Sorenes) set in again today at around 3 pm. Wee… this time thought it was my deltoids, biceps, and triceps. My hamstrings and abductors are a little sore. But my focus was on upper body so, it makes sense that those are more sore.

We did 2 hours of Muay Thai and Kali today.

Muay Thai- Kick High

I had a great day today in Muay Thai. Thanks to Kru Krysta for the fantastic class. The workout was hard, and fantastic. The conditioning we did where we did 20 kicks in a row, 5 on each side was amazing and while gassing, cause I was not breathing right, was amazing. I was having one of those good days where things were clicking. Where I have been training, and training, and it finally feels like my muscle memory is taking over. Even though I was sore I was able to do it all. As I am sitting here and things are cooling down, I can feel how sore I am and it is going to be fun tomorrow!

We worked on the Thai four counts again, this time with a teep first. We teep our training partner and then we have to chase them down to get the first kick in. What that had us practicing was our hop kick, and closing the distance. If you teep a person correctly it will send them back. When we work on teep to same side kick, to our punches to same side kick. We are forcing our bodies to practice and get better hip mobility. Which is key to landing our kicks correctly.

I got some really great compliments. I was working on our teep to 4 count, right teep, to right torso kick, hook, cross, to left kick. Kru Krysta came up to me and said “great job Tanya, look how high your kicking! A month ago you were not kicking that high.” I was working with some one that is nearly 6 foot, and I have to kick about just below shoulder level for me to hit his torso. We were continuing our drills, and she came back around, and Kru said “your kicks were looking great”. I was getting my rotation in on the ball of my foot, and my teeps were sending him back and I was chasing him down for my kicks.

Kali – Guillotine

After an hour of Muay Thai that kicked my butt, but was a blast. We went right into Kali. We worked on Silat again. Let me tell you when your triceps and deltoids hurt already, and some one does an arm control on you where they are putting the blade of their forearm into your triceps it does not feel good. We continued with learning how to smoothly take your opponent/assailant down. We also worked on how if they fight you and your move how to counter their trying to muscle up. We added something called the Guillotine Choke hold where you can either choke and cut off oxygen to the head thus rendering them unconscious and you can run away. Or doing the Guillotine on the jaw line, as a pain submission were they will stop fighting and want you to stop because the pain is unbearable. Then we did a variation where we do the full Guillotine with a thumb pressed into the hollow of their neck. This is also a pain submission, and if they don’t tap will also restrict airflow to the brain.

I have to remember to make sure to control the arm better. I sometimes let go of the arm, or stop framing against their neck with control of their arm. If I do that the assailant will then get out of my hold and then continue to possibly harm me.
