Onigiri Rice Bowl – Spicy Salmon Mayo

I am half Japanese and I tend to have cravings that sometimes are hard to fulfill. Sometimes it is just a lot of extra work to form them into balls. So I just made it into a bowl.

I would normally add seaweed to it, but I ran out. I know… I know… I am going to loose my Asian card cause I don’t have seaweed in my house.

So when I don’t have time between my job, and dealing with my kids, and the rest of the household chores I just made it in to a bowl.

In Japan there is a thing that is famous around the world. Used for lunch boxes all over the country. I remember getting them in my lunch box and I would get so excited. Onigiri! Onigiri is what we call rice balls. There are many kinds of onigiri with many kinds of fillings. I love many of these flavors/combos, Umeboshi (pickled plumb, a favorite of mine), Tuna Mayo, kombu (simmered seaweed), shrimp, just to name a few. Another one of my favorite is spicy salmon mayo or Shake Mayo (pronounced sha kay mah yo).

Today I made a spicy salmon mayo onigiri bowl.

I really recommend you try it if you can. Luckily it is super easy. I added other fresh veggies to it cause I wanted some more veggies.

Spicy Salmon Mayo Onigiri Bowl

Ingredients:

  1. 1 cup of cooked rice
  2. 1/2 cup shredded raw carrots
  3. 1/2 cup of sliced mushrooms raw
  4. 1 green onion sliced raw
  5. 2 radishes sliced raw
  6. 2.5 oz of salmon in a pouch/can
  7. 1 tbs of mayo
  8. Sriracha to taste
  9. salt and pepper to taste
  10. seaweed (optional but so tasty)

Directions:

  1. Cook rice to direction on package
  2. Mix together salmon, mayo, sriracha, salt and pepper.
  3. Add salmon mixture to rice, add veggies to rice, and enjoy.
  4. (alternate toppings to add, seaweed, sesame seeds, umeboshi)

The salmon mixture is what you may find in a spicy salmon mayo onigiri. I just put it on the outside, because I don’t have time to mold the rice into balls. But you know what it tastes phenomenal and looks beautiful to boot. Is it in the cute shape of a rice ball with seaweed? Nope but it is just as good.

Its also healthy, full of fresh veggies, low in fat, full of protein, and oh so tasty.

Like I said I would have added seaweed, but I did not have any.

What Should I Do During The Holiday? Fitness Angst…

Happy Thanksgiving Everyone! If you are from the U.S. or live in the U.S. there is a small holiday called Thanksgiving. (pssstt… its not small, its a huge food and family holiday for us) Where we use it as an excuse to get together with family and friends and give thanks for what we have. We cook gigantic birds called turkeys, and share food. It stems from, we are told as young Americans, the first meal shared by the colonists and the Native Americans who were here before them.

These things are good to keep in mind for any holiday, anywhere.

Just so you know this is an opinion piece. I have read so many differing opinions. TLDR -If you don’t have time to read the whys… here is the gist of my post. Do what is good for you. But there are some pros and cons for different approaches depending on where you are in your journey.

Part of me wants to just say, have fun eat what you want in the holidays. Time with your family is not infinite live it up. But that is not necessarily the case.

What everyone should do no matter where they are on their fitness journey:

  1. Keep working out…Even if you are traveling and away from home. Find ways to get your workout in. Make it an adventure. If you love running, take your running shoes and some gym clothes with you and run around where ever you land. Its a great way to learn about the place you have to spend your holiday.
  2. Learn simple exercises that you can do without a lot of equipment. Stick to things like squats, sit ups, planks, lunges, jumping jacks, push ups, bear crawling, etc.
    • Write these down on a piece of paper and pack that with you so that you have something you can look at and perform in a hotel room, or even your sister in laws brother house that you have to be at for the family gathering.
  3. Make a holiday game plan, and stick to it. Or lets be honest stick to it as best you can. If you had one extra piece of chocolate don’t let it derail your entire holiday game plan.
  4. Check out the local gym if you need weights. They sometimes have day pass you can purchase, and some gyms will let you try out the gym for free if you ask. You can also purchase month to month memberships at gyms.
  5. Keep drinking your water
  6. Buy your own snacks, and monitor your snacking

If you are new to this journey:

If you are new to the fitness journey then I would say being strict about your routine, and food intake is super important. You are still learning how your body works, and reacts to exercise and food. It takes about 21 days to form a habit, and if you are in the middle of that 21 days, or just a few months into your journey, now is a critical time to stick to the plan.

  1. Stick to your routine as close as possible. If you cannot do your workout, make sure to stick working out at the same time of day, and same days.
  2. Keep counting your Macros. If you are counting your macros and calories, keep doing so. Think ahead of time, and figure out what amount of Turkey, stuffing, potatoes, and green beans you can have.
  3. Keep making good decisions and aiming to add new habits that are conducive to you fitness goals. Remember this is a journey not a race.
    • Avoid that extra cookie, or that piece of pie, choose fruit or naturally sweet items instead.
    • Avoid sweetened drinks (there are a lot of hidden calories in those, like juice, and eggnog)
    • Avoid alcohol if you can
    • Avoid sauces (there are a lot of hidden calories)
    • Choose lean cuts of meat
    • Chose veggies that are not covered in sauce
    • Chose to snack on raw veggies instead of the pretzels, chips or other appetizers.
  4. Don’t let other people make you feel bad, don’t let your family make you feel bad for your decisions. You are doing this for you, not for them. You are trying to make yourself better.
  5. Plan to get back to your normal schedule when you get back home, or after the holidays. Stick to your plan.

If you are established in your fitness routine:

If you are seasoned and established in your fitness routine I feel you know your body better. You know how it responds to exercise, and you know it responds to different kinds of food. You have been counting calories/macros for a while. You have been practicing intermittent fasting for a while. You know what you have been doing. You have your routine.

  1. First of all taking a few days of will not set you back. You know how to get back to it and you will. You don’t have to be as strict. You know what you have done, and how to do it.
  2. Keep in mind what your body needs to function. You understand portion control. You know what your plate looks like.
  3. Keep up your workout. However, it does not hurt to change it up. As a matter of fact it is good for you and your body. Your body gets used to a type of physical exertion so the holidays are a good way to change it up for a short time to get out of the rut.
  4. Look up cool need things to do in the area you are going to be at. If going to an area that has snow. Take the time to go skiing, snow shoeing, hiking, and sledding. If you are going some where there is sand and water, swim, run on the sand, wake board, and try surfing.
  5. Don’t let one meal or one mistake derail your entire holiday.
  6. Get back on track after the holiday. You have to make sure you get back to it. Most likely if you are like me. You will feel like something is missing because you it is such a part of your life. You will want to get back to it as soon as possible.

The holidays are a tricky course to run. Spend time with your family. Enjoy the company. Enjoy the food sensibly. You can over indulge and that might set you back, but if you keep nutrition and exercise in mind you should be alright. Do what is right for you, and don’t let anyone guilt you into eating or doing anything you don’t want to do. Remember you are working to make yourself better. Keep working to make the best you that you can be. You do you… everyone else will see your dedication and hard work.

Healthy Shrimp Poke Bowl

I had an early morning. I woke at 4:30 am, and had a fru fru coffee, but forgot to eat breakfast. So I was pretty hungry getting home.

I decided to make a poke bowl for lunch. I took a short cut and bought pre poached shrimp from the super market. I had rice cooked from dinner last night. Chopped up some veggies, shredded a carrot, and made a simple sriracha mayo.

It turned out fantastic. It was so delicious, and I only used half of the sauce mixtures. This is a great lunch with a rainbow of colors and flavors. This dish has lots of vitamins, gluten free, and great source of protein.

I have noticed the poke bowl has become a thing. At least in America. However, this is something I would eat normally. I have also done this with just some eggs, or egg whites.

Ingredients:

  1. 1 1/2 cup of cooked rice.
  2. 1 carrot shredded
  3. 1/3 of a cucumber sliced
  4. 1 green onion sliced on a bias
  5. 5 poached shrimp or about 3 oz
  6. 1/2 cup of sweet peppers sliced
  7. 1 cup of spinach

Directions: Makes 1 serving

  1. Cook the rice per instructions on the package
  2. Shred one carrot
  3. Slice up 1/3 of a cucumber
  4. Cut up 1 green onion, and sweet peppers
  5. Add spinach to rice in bowl, add all other veggies.
  6. Poaching shrimp – Clean and de-vein shrimp, in a pot of boiling water add salt enough so that you can taste the salt and it tastes like the ocean. Add shrimp and cook for about 2 to 3 minutes depending on size of your shrimp. Transfer to an ice bath to stop cooking.
  7. Place shrimp on your veggies.

Ingredients Directions Sauce: Makes 2 servings

  1. 1 tbs of mayo
  2. 1 tbs of sriracha ( go less if you like less spicy)
  3. 2 tsp of lemon juice
  4. mix all above together and top on the poke bowl.

Calories 500, Fat 6.8 g, Fiber 5.3 g, Carbs 85.9 g, Sodium 1515.5 mg,

I hope you all get a chance to try this. It is delicious. You can opt not to use the mayo, and just put some wasabi and soy sauce on it. That would be delicious too. You can also make this vegan by removing the shrimp and mayo.

Pumpkin Pie Protein Waffle

Pumpkin Protein Pancakes

Yup I did it. I made pumpkin pie flavored protein pancakes this morning. I have 2.5 to 3 hours of training to do today. So I needed a good breakfast that stuck with me. The best part is it was delicious.

This is both light and full of protein so that it will take longer to digest. Its so good, and my husband and kiddos said that the topping tastes like pumpkin pie.

I added whipped cream to my waffle, and made a pumpkin pie puree topping.

Pumpkin Pie Protein Waffles

Ingredients Batter: (yield 7 servings)

  1. 2 cups Birch Benders Protein Pancakes
  2. 1 egg
  3. 1/2 cup organic pumpkin puree
  4. 2 tbl veggie oil
  5. 1 tsp of cinnamon
  6. 1/2 tsp of pumpkin pie spice
  7. 1 1/2 cup of water

Ingredients Pumpkin Pie Topping: (yield 4 servings)

  1. 1 cup pumpkin puree
  2. cinnamon to taste
  3. pumpkin pie spice to taste
  4. 2 tbs maple syrup

Directions:

  1. Mix 2 cups of Birch Benders mix, with oil, water, egg and pumpkin puree.
  2. Heat up your waffle iron, spray with pan spray
  3. Fill the waffle iron with 1/2 cup of mix
  4. Cook till done

Directions for topping:

  1. Mix together 1 cup of pumpkin puree, the spices, and the maple syrup.

Stats: For 1 waffle the recipe made 7 waffles.

155 calories, 5.4 g Fat, 1.14 g fiber, 16.28 g carbs, 183.71 mg salt, 10.3 g protein

Egg Whites Scramble with Veggie Sausages

This is a simple breakfast. Its something that I do often. I waffled over if I should post it because it is so simple. But it is delicious vegetarian, full of protein, nutrients, and vegetarian. Which my body seems to run better on anyway. =)

It took about 15 minutes all in all to make.

So simple as it is here you go:

Ingredients:

  1. 4 egg whites
  2. 1 cup of portabella mushrooms sliced.
  3. 1 cup of sweet peppers sliced
  4. 1 green onion sliced
  5. 2 Morning Star Farms veggie sausages
  6. 1 tsp of olive oil

Directions:

  1. Follow the package details on sausages.
  2. Saute lower half of green onion, and mushrooms, add the sweet peppers.
  3. Move the veggies to the side, add egg whites and scramble.
  4. Serve up warm and enjoy.

Smoothie Bowl w/ Chocolate PB2 and Honey

Another smoothie day. It is going to be to cold for smoothies soon, so I have to get my smoothie on. I decided to make another smoothie bowl for lunch.

This is gluten free, uses natural sugars, dairy free, vegan, healthy/full of vitamins, and so yummy.

I wanted to get some protein in there. So I added the PB2 Chocolate. It is a chocolate peanut butter powder. It is great on waffles, in waffles, on toast, in smoothies, in shakes, on smoothie bowls. You get the picture I am sure.


Ingredients:

  1. 2 cups of frozen fruit
  2. 1 frozen banana
  3. 1/2 cup almond milk
  4. 2 cups of water

    Toppings:
  5. 2 tbs of PB2 Chocolate Peanut Butter powder
  6. Fruit
  7. 1/2 tbs honey
  8. Pinch of Slivered almonds

Directions:

  1. Blend the frozen fruit till you have tiny pieces, almost looks like rice
  2. Add liquid and blend till smooth
  3. Add toppings and enjoy

Chicken Tortilla Soup

Want a quick easy soup that you can make for your family? Oh yeah anything quick and easy on a school night is the best.

Here you go. This was husband and kid approved. It was easy and I was able to set it and forget it till dinner time. This is great for the cooler weather when it is nice to have a hearty warm soup.

Ingredients:

  1. 2 lbs of chicken breasts
  2. 2 cans of black beans rinsed
  3. 1 can of enchilada sauce
  4. 1 can of fire roasted green chilies
  5. 1 can of fire roasted diced tomatoes
  6. 2 cloves of garlic chopped
  7. 1 onion chopped
  8. 1/2 tbs of cumin
  9. 1 tsp of chili powder
  10. Frozen corn
  11. Salt to taste
  12. 4 cups of unsalted chicken stock
    Toppings
  13. tortilla chips
  14. sour cream
  15. shredded cheese
  16. avocado
  17. jalapeno sliced

Directions:

  1. Saute onions in olive oil till translucent (if you have an InstaPot, you can do this in the pot, if you have a slow cooker sautee on the stove)
  2. In the InstaPot or Crock Pot – add diced garlic, add canned chilies, canned tomatoes, canned enchelada sauce, canned beans, chili powder, cumin, chicken stock, salt to taste.
  3. Add boneless skinless chicken into soup
  4. Settings for appliances:
    1. for crock pot set to high for 4 hours, or low for 8 hours
    2. for an InstaPot set it to pressure, high, 9 minutes, and turn the valve to seal
  5. Once soup is done cooking, take out chicken and shredded chicken, add chicken back in and add frozen corn. Stir together.
  6. Top with toppings you like.

Two cups of this soup has about 260 calories, and 36 calories from fat. That of course is before you put the toppings on it.

Overnight Oats w/ Raisins, Chia, and Nuts

So I work early in the morning. Very early at a bakery. I wake up and I normally don’t eat till after my work is done. When I calculated how long I went without food for I was surprised. I went 14.5 to 15 hours before eating. So to remedy this I tried making overnight oats.

Now this was the first time making this and I used what had on hand to make something I could eat in the morning.

I used oats, chia seeds, nuts, raisins, honey, and whole milk. I usually like soy or almond milk. So I used what I had.

I am happy to say it was delicious. I can’t wait to make and try out other variations.

It was quick, and easy. I mean it took me 5 minutes to mix together and put nuts in a baggie. Then it sits in the fridge overnight.That is a great plus. It tastes great and it was quick and easy. On not to mention healthy.


Overnight Oatmeal w/ Raisins, Chia, and Nuts

Ingredients:

  1. 1/2 cup or 4 tbs old fashioned oats
  2. 1/8 cup or 2 tbs of chia seeds
  3. 3/4 cup of milk (use dairy, or my favorite Soy or Almond Milk)
  4. 1/8 cup or 2 tbs of raisins
  5. 1 tsp of honey
  6. 1 tsp vanilla
  7. pinch of salt
    Toppings
  8. 2 tbsp of Nut-rition mix

Directions:

  1. Mix together oats, chia, milk, raisins, honey, vanilla, and salt. Mix well.
  2. Let it sit overnight.
  3. Take with you to work, and add toppings before eating.

Calories/Stats:
Calories 556, Fat 23 g ,Fiber 14.3 g, Carbs 75 g, Sodium 110 mg, Protein 18 g


I am going to try to see if I can get my husband to eat it. If he likes it that is great. It is healthy and full of fiber. Score one for the wife and healthy foods.

This is full of fiber, only has natural sugars, and gluten free. Depending on what you put into it. This can be dairy free, nut free, and fat free.

Make Your Own Tropical Smoothie Bowl

If you have been anywhere in the metropolitan U.S. of A, you will notice that smoothie bowls are a thing. Especially in the summer when its hot and you don’t want to eat something hot. As fall is kicking in and its going to get colder and I don’t know about you but I will want less cold foods and more warm, or warming foods. But since it is still only the fall and summer is still holding on I thought I would post this.

Its easy peasy. Choose a frozen fruit you like, or a mix of them. Have frozen bananas on hand. And choose your toppings. For this one I chose nut and dried fruit mix for the healthy fats, a few dark chocolate chips to feel like I am getting a treat, desiccated coconut, and frozen raspberries.

You are going to blend the frozen fruits till you get tiny chunks of fruit. It kinda looks like confetti. It will look a little like this.

After you get the frozen fruit mix into tiny chunks, you add the liquid. Today I used soy milk and water. Blend again till smooth and you get something that looks like soft serve ice cream.

Tropical Smoothie Bowl

Ingredients:

  1. 2 cups of frozen fruit (this was a tropical fruit mix)
  2. 1 frozen banana
  3. 4 tbs of soy milk
  4. water as needed alternately you can use juice instead

    Topping ingredients
  5. 2 x tbs Nut and fruit mix (I used planters NUT-rition)
  6. 1/4 frozen raspberries
  7. 1 tsp of dark chocolate chips
  8. 2 grams of desiccated coconut

Directions:

  1. blend the frozen fruit till it is in small chunks
  2. add liquid and blend till smooth, add water if needed
  3. put the smoothie in a bowl and add toppings and enjoy.

The Supplement Stacks I Use and Why I Use Them…Do they work?

Warning: This is a hotly debated topic among the fitness world. Some people really swear and live by them, and some people say they are not needed or only certain supplements are needed.

When I first started my fitness journey, supplements seemed to be popping out of the wood work. I could look at a fitness article without there being at least three adds for what would help me with energy, recovery, and muscle building. Or do I want the best performance for the time I put into working out? If so then use this product!

My head was spinning and I was so leery of being scammed that I tried to do as much research as possible. Because who does not want to get the best out of their workout, and not waste their time doing their workout? I decided to just change one thing at a time. I just wanted to get my body moving, and find a workout that I did not hate. That was my goal. I focused on working out then on my diet, trying to get all the nutrients in that I need. Because I thought and still do, that you can get most of the nutrients you need out of the food you eat. So even though I did research I still sat on all my information and just ruminated on it.

Now I do take supplements but use them just as what they are supplements. I take them to supplement my nutrition. I do not rely on them however have found them to be helpful.

If you are just starting out, and or just working out 2 times a week, at a very moderate to light level. Then I really don’t think you need to take these supplements. If you tighten up your nutrition and can get your protein, carbs, and fats in through food. Stick to that.

However, if you are training hard, doing HIIT workouts, training more than twice a day, and more than 30 minutes at a time… then I have found for my body, the supplements actually have helped me. Again, all I can speak to is what has and is working for me at the time. Experimentation is the key. Find what works for you and your body. Also of note, I am not a great meat eater. As a matter of fact I prefer plants to meats. Just as something my body processes better. So for that reason these supplements actually help me.

Ok So my “stack” of supplements I take are as follows:

Pre-workout – BCAA’s + Caffeine – I take ON BCAA’s

Post workout – Recovery after strenuous workout, contains BCAA’s, B vitamins, electrolytes, replenishes glycogen, and carbohydrates –I take Vega Sport Recovery

Nuun – is an electrolyte replacement for hydration, low calorie, and low sugar. (15 calories, 1 g sugar, 300 mg sodium, 150 mg potassium, 25 mg magnesium, 13 mg calcium

Every day – Multivitamin, vitamin D, Glucosamine and Chondroitin ( This was prescribed to me by my doctor after my herniated disk. But is a great addition to your supplements as you get older for joint and cartilage repair.)

What is a BCAA? There are 20 amino acids your body uses to synthesize proteins. Nine of the 20 are considered essential, and your body cannot make these you must ingest them. Three of the 9 essential amino acids are the branch chain amino acids or (BCAA). They are Valine, Leucine, and Isoleucine. As a primarily plant eater I have a hard time getting in quickly soluble proteins. When you take the right supplement, you get all the BCAA’s that your body needs to repair your muscles from a strenuous workout.

These are the 4 benefits of BCAA’s:

  1. Decrease muscle soreness- BCAA’s decrease muscle breakdown that can lead to soreness, so you have DOMS (delayed onset muscle soreness) for a shorter period of time.
  2. Builds muscle – BCAA’s leucine activates protein synthesis, to help build muscle
  3. Prevents muscle wasting – When your body is low on BCAA’s it will break down your current muscle and re-synthesize its proteins for what it thinks you need. This breaking down and re-synthesizing is normal body process, and the BCAA’s help prevent that even if its just a little bit.
  4. Reduce exercise fatigue – BCAA’s are used up when you exercise, and as the levels of BCAA’s decrease in your blood, your body releases tryptophan to your brain, which makes you brain think you are tired and fatigued. The theory is taking them before workout keeps the levels high in your blood and therefore you can work harder for longer.

You don’t need the BCAA’s before every workout, and you don’t need to drink the Vega Recovery after every workout. You want really want to take them only if you did or are going to do a hugely strenuous workout. Also you want to take time off taking the preworkouts that have added caffeine in them.

Here are some BCAA’ rich foods:

  1. Greek Yogurt
  2. Eggs
  3. Chicken
  4. Turkey
  5. Tuna
  6. Beef
  7. Milk
  8. Soy Powder/Milk
  9. Whey powder

Why Are These Supplements Great For Me?

Here is why they are great for me. Over the holidays, I ran out of BCAA’s. I went for a month without them, and I was doing fine. However, I noticed that my muscle fatigue and soreness was sticking around a bit longer. I took it again last night and had a much better sleep this last night. I woke up not feeling like my muscles had been run over.

Also during Thai Camp, I became desalinated. I took my BCAA’s in the morning and made sure I was drinking plenty of water. This is great for a normal workout but after about 4 hours of working out that day, water and pre BCAA’s was not enough. I got a major cramp in my calf, and needed magnesium, potassium, and salt replaced. It also took a massage therapist to help me calm the muscle down. I was facing another 3 to 4 hours of training that day, and I made sure I replaced what I lost in sweat, and what my body was burning through.

Again do your research, find something that will work for you. If you are vegan or vegetarian a great product I like and its called Vega. As with everything, look at the ingredients and make sure they source their ingredients from reputable places, and with good nutrition.
